Vinification
Only the free run juice was used for this wine to avoid picking up
tannins from the Viognier skins. The juice was racked from its solids,
leaving just a little (1-2%) to add complexity. Fermentation took
place in temperature controlled stainless steel tanks using an
aromatic yeast. After completion, the wine remained on the fine
lees for a short time before stabilisation and early bottling to
maximise freshness.
Winemakers Comments
The cool climate fruit has tempered the McLaren Vale component
adding some elegance and citrus notes to the traditional rich,
round apricot and stone fruit kernel notes often seen in the warmer
viticultural districts.
Tasting Notes
Medium straw in colour with light green hints and a touch of gold,
this is a perfumed, youthful wine, with notes of citrus flower, lime
and apricot on the nose. On the palate it is fresh and clean, with
attractive acidity balanced by apricot and lychee fruit characters.
Zesty, lifted finish.
