Vinification
The fruit was hand picked to ensure optimal quality and processed as soon as it reached the winery to retain the delicate fruit. The grapes were crushed and pressed with only free run and very light pressings retained to ensure balance with fruit and phenolics. It was inoculated with an aromatic yeast and fermented in stainless steel tanks to maintain fruit intensity and purity. The wine did not see any oak and was bottled early to ensure the purity of the aromatics were retained.
Tasting Notes
This wine displays intense pear, citrus and hints of slatey minerality. On the palate, it is soft and dry, with pleasant acidity, and hints of bread crust and stewed pear, which together create a complete, balanced palate that is elegant, well-structured and fantastic with food
